Go when the demand is lowest, like February. There aren't any particularly secret fares, so the usual agencies like Orbitz, Travelocity, and Expedia will quote you realistic prices. Some people like Kayak.com which looks for fare drops, but in this economy, I doubt you'll be seeing any huge fare cuts.

Virgin Atlantic and American Airlines. Personally I prefer Air France, fantastic although not very long stop over in Paris.

LA to Sydney is 14 hours so to Cairns would be an hour or so less

I would say about 18-20 hours. That includes getting from plane to plane because I doubt you will be able to find a non-stop flight very easily.

18 hours give or take a few minutes, depending on wind and weather conditions. You also loose a day on the trip, so if You leave on Monday you'll arrive Wednesday. That's due to the dateline.
